Super Easy Summer Dessert

By Sherry Baines July 9, 2018

We all scream for ICE CREAM!  This super easy ice cream sandwich cake is a crowd winner!  I have made this for several different family get togethers and it was always the first dessert gone!

Below is the recipe:

  • 18 vanilla ice cream sandwiches
  • 1 cup of crushed Oreos (or whatever topping you choose i.e. M&M's, Reese Cups, etc)
  • Hershey's Caramel Syrup
  • Hot Fudge Sauce and I used Hershey's Syrup for the top
  • 2 -  8 oz containers whipped topping

I put my ice cream sandwich cake in my covered plastic cake container so that it is easier to take with me.   You can line the cake container with either aluminum foil or parchment paper.  Also, keep in mind that you can layer this cake so many different ways.  I used the regular size ice cream sandwiches and layered them 4 to a row (you can also use the mini ice cream sandwiches).  When you have your first row then spread some hot fudge topping over the ice cream sandwiches then some whipped topping until completely covered.  Then move on to the next layer, doing the same steps.  When you are done with the layering, on the final layer you will want to cover with the whipped topping from top to bottom, kind of like icing a cake.  Then on top, this is where you can add either the crushed Oreos, M&M's, Reese pieces, Reese cups, whatever your heart desires and on top of your candy and or cookie topping you will swirl the caramel syrup and/or Hershey syrup all over the top and sides.  Next, you will put the cake into the freezer for at least 2 hours.

Before you serve, you might want to set it out for about 15 minutes so that it is easier to cut.  Serve & Enjoy!  After cake is served,  if any of the cake is left, I will put the remaining in the freezer.

I hope you enjoy this dessert as much as my family and I do!!  Do you have some super easy summer dessert recipes?  If so, please share them with me Sherryb@macaronikid.com.
